White sugar, brown sugar, and crystal sugar are all refined from sugar cane juice. Their main component is sucrose, which is a disaccharide molecule composed of a glucose and a fructose molecule bonded together. It is also the most common form of sugar transported within plants.

Due to the different production processes of each type of sugar, they differ from each other. For example, crystal sugar is made by placing ice crystals in a highly saturated granulated sugar solution, allowing it to slowly crystallize under constant temperature. Its composition is no different from granulated sugar. Crystal sugar has the highest sucrose purity, nearly 100%; followed by white granulated sugar; brown sugar (commonly known as brown sugar) is unrefined and contains impurities, with a purity of less than 80%.
